Avocado Toast with Chorizo and Chives


This easy toast recipe is perfect for breakfast, brunch, or (midnight) snack.

Preparation Time: 10 minutes
Inactive Cooking Time: 15 minutes
Cooking Time: 8 minutes
Serves 4

1 piece chorizo, dried
125 grams olive oil
4 large pieces of crusty sourdough 2 avocado, ripe
10 grams chives, chopped

1 Dice the dried chorizo into small pieces and place in a small pan.
2 Add the olive oil and bring to a slow simmer. Turn of heat and let steep for 15 minutes. The olive oil will take on the color of the chorizo.
3 Brush both sides of the bread slices with the chorizo oil and toast in the oven.
4 Halve both avocados and remove pits. Scoop out the meat onto the toasted bread slices.
5 Sprinkle with coarse sea salt and drizzle more of the chorizo oil and chorizo bits. Garnish generously with the chopped chives
