Chocolate Cake with Tablea Ganache and Pastillas Filling

A glorious cake fit for any celebration.

Preparation Time: 2 hours
Baking Time: 30 to 45 minutes
Makes one 8-inch cake

INGREDIENTS
FOR THE CHOCOLATE CAKE
2 cups white sugar
1 ¾ cup all-purpose flour
¾ cup cocoa
1 ½ teaspoons baking soda
1 ½ teaspoons baking powder
1 teaspoon salt
2 pieces eggs
1 cup milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup water, boiling

FOR THE TABLEA GANACHE
¾ cup dark chocolate
¼ cup tablea
¾ cup whipping cream
3 tablespoons unsalted butter

PROCEDURE
1 Preheat oven to 350° F.
2 Sift sugar, all-purpose flour, cocoa, baking soda, baking powder, and salt.
3 Add in eggs, milk, vegetable oil, and vanilla extract. Mix.
4 Add hot water last and mix.
5 Pour into an 8-inch cake mold.
6 Bake for 30 to 45 minutes or until cake tester comes out clean.
7 To make the tablea ganache, melt dark chocolate and tablea. Mix in whipping cream and butter with melted chocolate until it comes out glossy.
8 Pipe in the ganache. Garnish with whole pastillas, cocoa nibs, tablea ganache, and chocnut.
