Chunky Monkey Banana Bread Pudding


Take banana bread to a whole new level of decadence with this easy-peasy recipe. It’s great for bonding with kids, too!

Preparation time: 30 minutes
Cooking time: 1 hour 15 minutes
Assembly time: 20 minutes
Serves 4

For the Banana Bread
3 ripe bananas
1⁄2 cup canola oil
1 cup water
1⁄2 teaspoon vanilla
3⁄4 cup sugar
3 eggs
2 cups f lour
1 teaspoon salt
1 teaspoon baking powder
1⁄2 cup semi-sweet chocolate, cut into chunks
1⁄4 cup walnuts (optional)

For the Custard
2 cups full cream milk
1⁄4 cup melted butter
3 egg yolks
1⁄2 cup sugar
1 teaspoon vanilla

For the Banana Bread
1 Mash the ripe bananas and set aside. Then, mix the canola oil, water, vanilla, sugar, and eggs together. Add in the mashed bananas and set aside.
2 In another bowl, combine flour, salt, and baking powder. Combine the dry ingredients with the wet ingredients and fold in the semi-sweet chocolate. Pour mixture into a greased loaf pan.
3 Preheat oven at 325°f. Afterwards, bake the bread for 45 minutes or until a toothpick comes clean when inserted. let cool and set aside. you can eat it as is or turn it into a bread pudding with a twist.

For the Bread Pudding
1 Cut the banana bread into chunks and place in a baking dish.
2 Mix all the custard ingredients until well- combined. Pour into the baking dish and ensure the banana bread is well-soaked. You may double the custard mixture, if needed.
3 Bake the pudding in a preheated oven for 30 minutes at 325°f or until it springs back when pressed on top.

Chef ’s Note:
You may opt to add 1⁄4 cup of walnuts with the banana bread procedure.
