A fabulously delicious dish — just like what you deserve.
Preparation time: 15-20 minutes
Baking time: 15-20 minutes
1 cup walnuts
1 tablespoon lemon rind, grated
1⁄2 tablespoon olive oil
1 tablespoon maple syrup, more for drizzling
1⁄2 teaspoon garlic, minced
salt and pepper, to taste
2 salmon fillets, 6-ounce
2 tablespoons dijon mustard
4 teaspoons lemon juice
1 Preheat oven to 350°F. Line a baking sheet with parchment paper.
2 Coarsely chop walnuts in a food processor. Add lemon rind, olive oil, maple syrup, garlic, salt, and pepper and pulse until crumbly, while still sticking together. Set aside.
3 Arrange salmon fillets skin side down on lined baking sheet. Spread dijon mustard on top of salmon fillets.
4 distribute the walnut mixture evenly over each fish fillet.
5 Bake for 15-20 minutes or until cooked through.
6 Before serving, drizzle with lemon juice and maple syrup.
