There’s nothing like the comforting flavors of adobo and the satisfaction of a good rice meal.
Preparation time: 15 minutes
Cooking time: 25 minutes
Serves 4 to 6
Corn oil, for frying
1 head garlic, sliced thinly
2 cups cooked pork adobo, flaked or diced
1 cup adobo sauce
4 cups brown rice, cooked
1 cup brown rice, raw
For the Garnish
1⁄2 cup fresh tomatoes, sliced thinly
1 salted egg, diced
1⁄4 cup red onions, sliced thinly
Fresh cilantro (optional)
Green onions (optional)
1 Heat around 3 tablespoons of cooking oil. Gently cook the sliced garlic on low heat for around 15 minutes or until toasted. Set aside for garnish.
2 Using the same garlic oil, fry flaked pork until brown. Add sauce, and simmer for 5 minutes or until sauce has reduced to 1⁄2 or more. Add rice and cook until sauce
is evenly distributed.
3 Garnish with toasted garlic and tomato salted egg salsa.
