When it comes to Vietnamese cuisine, pho is one of the first things that come to mind. This popular Vietnamese street food consists of broth, rice noodles called bánh phở, herbs, and meat. Although the story of how it came to be is unclear, one thing is for sure: this 20-minute meatball pho will definitely bring warmth and good vibes down your stomach. This cozy hearty noodle soup serves 2 people.

INGREDIENTS
FOR THE PHO
1 tablespoon oil
2 pieces garlic cloves, diced
1 piece small onion, diced
1 piece red chili, finely chopped
1 piece small ginger, finely chopped
1 lemongrass stalk, crushed and roughly chopped
1 piece star anise
1 tablespoon fish sauce
3 cups beef stock
Salt and pepper, to taste
100 grams vermicelli noodles

FOR THE MEATBALLS
1 pound ground beef
2 tablespoons cold water
1 tablespoon fish sauce
½ teaspoon sugar
1 teaspoon cornstarch
¼ teaspoon pepper
1 teaspoon salt
1 tablespoon oil

PROCEDURE
1. Prepare the soup base. Heat oil on medium, then sauté garlic, onion, chili, ginger, and lemongrass until fragrant, for about 2 minutes.
2. Add star anise, fish sauce, and beef stock. Bring to a boil and simmer until ready to use. Season with salt and pepper.
3. To make the meatballs, mix water, fish sauce, sugar, cornstarch, pepper, salt, and oil in a large bowl. Stir to combine.
4. Add ground beef and mix well. For traditional texture, make meatballs by hand. For a springy texture, place meat mixture in food processor and pulse until smooth, scraping sides to evenly mix. Then prepare meatballs with damp hands.
5. When ready, place meatballs in soup base and cook for about 7 minutes.
6. Finish with desired vermicelli noodles.
7. Serve with hoisin sauce and chili paste on the side. Garnish with fresh herbs such as basil, cilantro, mint, spring onions, etc.
