Ingredients

5 to 6 pieces tiger prawns

2 tablespoons vegetable oil

2 teaspoons garlic, minced

2 teaspoons white onion, minced

2 teaspoons crab fat

3 teaspoons water

Salt and pepper, to taste

Chives, chopped, for garnish

FOR THE ALAVAR SAUCE

3 tablespoons latik

2 teaspoons turmeric

2 teaspoons Spanish paprika

¼ cup coconut milk

2 teaspoons white onion, minced

2 teaspoons garlic, minced

1 tablespoon crab fat

1 tablespoon spicy shrimp paste

2 tablespoons vegetable oil

Directions

Make the Alavar sauce by sautéing garlic and onion in vegetable oil. Add all the other ingredients an simmer until thickened. Set aside.

Sauté garlic and white onion in vegetable oil.

Add tiger prawns and sear until the color of the prawns turn orange.

Add the Alavar sauce, crab fat, and water. Mix and let simmer until the sauce thickens. Season with salt and pepper. Garnish with chopped chives.
