Cucumber Sesame Salad Rolls

Ingredients

FOR THE VEGETABLE WRAP

2 pieces zucchini, cut into broad thin strips

½ cup cucumber, peeled and cut into matchsticks

½ cup carrots, peeled and cut into matchsticks

¼ cup red bell pepper, seeded and cut into matchsticks

½ cup turnips, peeled and cut into matchsticks

1 tablespoon mint leaves, minced

1 tablespoon coriander leaves, minced

2 teaspoons sesame seeds, white or black, as desired

FOR THE SESAME DRESSING

2 tablespoons tahini paste

1 tablespoon lemon juice

2 tablespoons water, filtered

salt, to taste

FOR THE GUACAMOLE

½ cup avocado, mashed

1 teaspoon lime juice

½ teaspoon shallots, minced

tabasco, as desired

salt, to taste

Directions

FOR THE SESAME DRESSING

Mix all the ingredients together in a bowl until it forms a thick paste. Set aside.

FOR THE GUACAMOLE

Mash all the ingredients together. Add tabasco sauce as desired. Set aside.

FOR THE VEGETABLE WRAP

Lay out 4 strips of zucchini on a flat board, overlapping each other. Spread guacamole thinly over the center of the zucchini.

Arrange the other vegetables on top perpendicular to the strips. Pour some sesame dressing on top.

Roll the zucchini to encase the vegetable mix. Repeat for the remaining vegetables
