Inactive preparation time: 30 minutes
For the squid marinade
1 tablespoon sake
2 tablespoons sugar
2 tablespoons mirin
¼ cup soy sauce
1 calamansi, zest extracted
300 grams squid
For the salted egg salsa
4 salted egg whites, chopped
30 mL Ilocos suka or any vinegar
5 grams white sugar
50 grams white onion, chopped
50 grams tomato, dice
Combine all the ingredients together and marinate the squid for 30 minutes. Cut the squid into bite-sized pieces, then skewer; arranging them from the body part first to the tentacles.
Combine all the ingredients together.
Arrange the skewers and salted egg salsa on the dish as desired
