2 to 3 pieces large mangoes
60 grams white sugar
125 grams all-purpose flour
Pinch of salt
3 pieces eggs
300 ml milk
2 tablespoons vanilla extract
Zest of 1 orange
Sliced almonds, toasted
Preheat oven at 180° C.
Slice the mangoes in cubes and freeze.
Butter a 9-inch ceramic or glass pan.
In a bowl, mix the flour and salt. In another bowl, whisk the eggs and the sugar. Mix in the eggs to your dry ingredients and mix. Add the milk and mix until well-incorporated.
Place the frozen mango cubes in your prepared pan and pour in the egg-milk mixture. Bake for 35 to 40 minutes or until golden brown.
Once pudding has cooled, sprinkle with powdered sugar and sliced almonds.
