Salted Caramel Pizza


Pizza for dessert? This Salted Caramel Pizza is oozing with the irresistible sweet-and-salty combo for a satisfying treat.

Preparation time: 1 hour 30 minutes
Cooking time: 10 minutes
Dough proofing time: 1 hour
Serves 6 to 8

For the Salted Caramel
125 ml water
200 grams sugar
125 ml heavy cream
1 tablespoon butter
1⁄4 teaspoon sea salt

For the Pizza Dough
63 ml warm water
1 1⁄8 teaspoons instant yeast
150 ml water, at room temperature
250 grams bread flour, more for dusting
3⁄4 teaspoon salt
1 tablespoon olive oil
unsalted butter, for brushing

For the Toppings
300 grams chocolate chips
200 grams mini marshmallows
1 cup graham biscuits, broken

For the Salted Caramel
1. In a saucepan, put in water and sugar. Put on high heat. Stick a thermometer into the pot, and heat the mixture to 150°c. Once the heat reaches 150°c, slowly turn up heat to 180°c for sugar to caramelize into an amber brown color.
2. Heat heavy cream in the microwave for 30 seconds. Slowly and carefully pour the cream into the caramel until it bubbles. Whisk until the cream and caramel are combined. Once settled, take off from heat and whisk in butter and sea salt. Set aside and cool.

For the Pizza Dough
1. Pour 63 ml warm water in a cup and sprinkle yeast. Once yeast has been rehydrated, add in room temperature water to the mixture. In another bowl, mix together the bread flour and salt.
2. Pour yeast mixture and olive oil into the bread flour. mix until a shaggy ball forms. Knead the dough ball on a floured counter for about 10- 15 minutes until elastic and smooth.
3. Place dough ball in a lightly oiled bowl. Cover with plastic wrap and set aside in a warm area for about 1 -1 1⁄2 hours to double in size.
4. Once risen, pre-heat oven to 260°c. Take 1⁄4 of the dough and set aside. lightly butter a round pizza pan, and roll the bigger piece of the dough. lay it out in the size of the buttered pan.
5. Cut a hole out of the center in the size of the ramekin to be used. Take a ramekin and butter it inside out. Roll the reserved pizza dough large enough to cover the ramekin. Place the ramekin in the middle of the pizza pan and completely cover the pan with the dough.
6. Bake the pizza for 5 minutes.

To Assemble
1. Take the baked pizza out of the oven, and scatter chocolate chips all over, except for the center cup. layer over the marshmallows and the broken pieces of graham crackers.
2. Bake for another 5-7 minutes until the marshmallows are puffed and toasted.
3. Take out the pizza, and pour in the salted caramel sauce in the center.
