Seafood Bicol Express

Assorted seafood and shellfish make for excellent complements with the sweet-spicy flavors of Bicol.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves 4

INGREDIENTS
3 tablespoons vegetable oil
3 tablespoons red onion, minced
2 teaspoons garlic, minced
1 piece green chilli
1 piece red chilli
¼ cup coconut milk
2 tablespoons water
3 tablespoons shrimp paste
Salt and pepper, to taste
4 pieces river shrimps
2 pieces squid, sliced to rings
8 pieces clams
1 piece tilapia, filleted
¼ piece chayote, julienned
¼ piece sili tops, fried

PROCEDURE
1 Sauté onion, garlic, green chili, red chili, and bagoong in vegetable oil.
2 Add seafood, coconut milk, water, and chayote. Simmer until chayote is cooked and the sauce is thickened.
3 Season with salt and pepper. Garnish with fried sili tops.
