Makes 12 to 15 muffins
1 cup milk
3 tablespoons unsalted butter, melted and then cooled
1 large egg, lightly beaten
1 pinch cayenne pepper
1 ¾ cups all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar
½ teaspoon salt
¾ cup grated sharp cheddar cheese
½ cup feta cheese
200 grams mozzarella cheese
1 Preheat oven to 350° F.
2 In a large bowl, combine milk, melted butter, egg, and cayenne pepper.
3 In a second bowl, sift together flour, baking powder, sugar, and salt. Stir in cheeses.
4 Add flour mixture to milk mixture and stir batter until it is just combined. The batter should be lumpy.
5 Spoon the batter into buttered or lined muffin tins, filling each about 2/3 full.
6 Bake 20 to 25 minutes.
