Take tofu to an incredibly flavorful level with this tasty and nutty twist!
Preparation time: 1 hour
Cooking time: 6 minutes
Serves 3 to 4
1 tablespoon soy sauce
1 teaspoon honey
1⁄2 teaspoon turmeric powder
2 garlic cloves, crushed
1⁄4 cup coconut milk, canned
3 tablespoons peanut butter
2 packs store-bought tofu (500 grams each and cut into 12 equal squares)
1⁄2 tablespoon peanut oil or vegetable oil
sliced cucumbers for garnish
1. Combine the soy sauce, honey, turmeric powder, garlic, coconut milk, and peanut butter in a bowl. Add the sliced tofu pieces and turn to coat well.
2. Thread tofu gently onto the skewers. Place the skewers in a freezer bag and marinate for at least an hour. set aside excess marinade.
3. Using a grill pan with some oil, cook each side of the tofu between 3-4 minutes or until brown. Brush excess marinade while grilling each side to keep the tofu moist and flavorful.
4. Serve skewers over warm rice and sliced cucumbers.
