Craving for something tasty yet light? Here’s a healthy prelude to an authentic Thai meal with the freshness of pomelo and a perfect balance of flavors and textures.

Serves 2 to 3
1 cup pomelo, shredded
2 tablespoons red onion, sliced
10 pieces mint leaves, plus more for garnishing
1 ½ tablespoons toasted coconut, plus more for garnishing
1 ½ tablespoons onion, deep fried, plus more for garnishing
3 pieces shrimp, boiled and halved
2 tablespoons chicken breast, boiled and shredded
FOR THE CHILI PASTE DRESSING
1 tablespoon fish sauce
2 tablespoons lemon juice
½ teaspoon palm sugar
1 tablespoon chili paste
1 teaspoon sugar
1 Prepare the chili paste dressing by mixing all the ingredients well.
2 Put in a bowl the pomelo, onion, mint leaves, toasted coconut, deep fried onion, shredded chicken, shrimps, and 4 tablespoons of chili paste sauce. Combine well.
3 Garnish with toasted coconut, deep fried onion, and mint leaves. Serve.
